    • 1 chicken, about 3 lb (1.4 kg), cut into 8 pieces (see note)
    • 1/4 cup (60 ml) olive oil
    • 1 onion, thinly sliced
    • 2 garlic cloves, finely chopped
    • 1 tsp ground coriander
    • 1/2 tsp ground cumin
    • 1/2 tsp ground ginger
    • 1/2 tsp turmeric
    • 1 cup (250 ml) chicken broth
    • 1 sweet potato, peeled and sliced into large cubes
    • 2 celery stalks, sliced into chunks on the diagonal
    • 2 tomatoes, sliced into wedges
    • 6 Medjool dates, pitted and quartered
    • 1 confit lemon, peel only, diced small, or the zest of half a lemon, blanched
    • 2 tbsp fresh curly parsley, finely chopped
    • 2 tbsp fresh coriander, finely chopped
