For fresh thyme and rosemary, just put the springs in a plastic bag in the freezer. After a week or so just bang on the sprigs in the bag and the leaves will fall off the stems. Remove empty stems and you will have fresh leaves to use. Leave them in the bag in the freezer.

hi I have a question if you have left over fresh herbs is there a way to preserve them as in turning them into dried herbs?? really dont want to throw them away

You could make a pesto and freeze it in an ice cube tray. You can also chop your herbs, just add olive oil, and freeze them the same way.
