Cheese Arancini

Presented as breaded and fried rice balls, these arancini combine Taleggio and Parmigiano Reggiano, which are added to the rice at the end of its cooking time. Once the mixture has cooled—and with the help of an ice cream scoop—shape the balls with your hands and then roll them in breadcrumbs. All that’s left is to fry them up and eat them while they’re still hot.
