8 Recipes to Cook from Your Vegetable Garden

Having a vegetable garden in your backyard or a few planters on the balcony is one of summer’s greatest pleasures. Zucchini, tomatoes, cucumbers, broccoli, carrots, beans, bell peppers, lettuce! You’ll be harvesting gorgeous produce all season long that are all a promise of delicious meals. Here are some recipes to transform your vegetables—that couldn’t be more local!—into colourful and ultra flavourful dishes!

1. Feta and Cucumber Pita Sandwich

To make this fresh and super-simple recipe, all you have to do is stretch your arm out and reach for that ripe cucumber on the plant. This dish highlights the wonderful combination of feta cheese and mint with cucumber, served in pita.

2. Broccoli Carbonara

Before it goes to seed and turns into pretty yellow flowers, the broccoli hiding in the shaded area of your veggie patch will find its place in this unpretentious pasta dish. Pancetta, leek and Parmesan complement the little green florets in a gooey, eggy sauce.

3. Black Lentil and Cherry Tomato Salad

For a vegetarian appetizer or side dish, this generous tomato salad is amazing. Pick a few perfectly ripe tomatoes and mix them with lightly nutty black lentils, cashew nuts and mozzarella di bufala.

4. Zucchini and Smoked Salmon Pita Pizzas

Cut very thin slices of super-tender zucchini that you just picked and cleaned. Then combine them with garlic, oil and lemon to top pita bread slathered with cream cheese and smoked salmon. Now that’s a lunch bursting with flavour!

This vivid vegetarian dish gives vegetables centre stage. Arrange freshly picked ripe bell peppers on puff pastry with asparagus and cheese. You can eat the dish hot or cold, with a crisp salad…straight from your garden. Gorgeous and delicious!

Let’s go nuts for carrots with this noodle dish starring our favourite orange veggie. Picked fresh out of the earth, it’s julienned and added to rice noodles, a sweet sauce, peanuts and cilantro. This noodle dish is the perfect companion to tofu and shrimp.

Feel like a fresh dish that overflows with green beans? We’ve got just the recipe for you: this simple dish that combines green vegetables with white fish, kalamata olives and tomatoes. It’s time to change things up with this great pasta plate.
