7 Recipes for Homemade Poutine

Ah, poutine… What would you do without it? You love eating it so much that it’s impossible to resist! At RICARDO, we love it too, and we have about 10 different versions of this proudly Québécois dish. Here are seven good enough to make your local snack bar jealous.

1. Lobster Poutine

When poutine and the king of crustaceans meet, the result can only be divine! Simplify the recipe by using store-bought fries. Add them to cheese curds and coat everything with a bisque-style sauce made of white wine, tomato and cayenne pepper with chunks of lobster meat. Top with green onions. A taste of the summer holidays in a bowl!

2. Vegetable Poutine

With its vegetables, including parsnip, potato, sweet potato, green beans and carrots, this variation on the classic poutine offers an array of colours and a delightful mix of flavours.

3. Red Wine-Braised Pork Poutine

This recipe is perfect for poutine served as a meal. Braise the pork shoulder for 3 hours, then add the pulled pork to homemade fries, cheese curds, green peas and a red wine sauce. Satisfying and so pleasant to share with everyone.

4. Sheet-Pan Poutine with Tofu and Red Pepper Sauce

This vegetarian poutine gives an original take on the traditional dish. Replace the fries with baby potatoes and tofu sticks, and make way for a sweet sauce made with a mild red pepper spread instead of the usual brown gravy. Served with broccoli, it makes an excellent weeknight dinner!

5. Red Wine and Mushroom Poutine with Soft-Boiled Egg

It’s time to take out your mushroom basket and dried morels to make this 100% gourmet poutine. Served with a red wine sauce and runny egg, it’s an all-around success. A great way to enhance the classic poutine recipe.

6. Vegetarian Poutine with Grilled Halloumi

Another excellent way to reinvent poutine is by replacing squeaky cheese with another type of cheese, such as grilled halloumi in this case. To complete the picture, make a slightly spicy sauce with vegetable broth and caramelized onions and serve everything over fingerling potatoes.

7. Dessert Poutine

If poutine as a main course remains a must, poutine as dessert is not bad either! Use churros instead of fries and cover them with pieces of torn marshmallows and caramel sauce. The illusion is total—and a fun way to conclude your meal!
