5 Chicken Recipes to Cook on the Grill

Already smelling the aroma of grilled chicken wafting from nearby backyards? We’ve developed some new recipes with each cut from the poultry to cook on the grill this summer. We’ve also got a few simple tricks for perfect chicken each and every time, certain to make your neighbours jealous.

1. Peruvian-Style Grilled Chicken (Pollo a la Brasa)

Grilled chicken is enjoyed everywhere around the world, but among its many variations, it’s worth turning your attention to pollo a la brasa from Peru. It’s butterflied chicken marinated in a mix of chili pastes, soy sauce and garlic. These chili pastes, commonly found in Latin American grocery stores, are essential to the recipe and provide an incomparable depth of flavour. Serve the grilled chicken with a green sauce made from cilantro, jalapeño pepper and lime, for a refreshing finish. It also includes mayonnaise and grated cotija cheese for flavour and texture.

2. Grilled Chicken Sandwiches with Charred Green Onion Sauce

Chicken thighs can be found both boneless and skinless at the grocery store, which makes for quick and even cooking. They’re therefore the perfect cut for sandwiches for those weeknight meals in the backyard. First, quickly marinate the meat in an oil and vinegar mix. This helps loosen the chicken’s muscle fibres slightly, making the meat more tender and flavourful in just 15 minutes. Pair with a charred green onion mayo, and you’ve got your new seasonal favourite.

3. Grilled Chicken Legs with North Carolina Barbecue Sauce

The Southern United States is known for its grilling mastery. For this recipe, we drew inspiration from North Carolina, where a distinctive style of barbecue sauce was invented. Made with a generous amount of vinegar to help preserve the meat, it’s a far cry from the thick, smoky and sweet sauces more typical of Texas-style barbecue. In true North Carolina fashion, the tangy sauce is brushed onto the chicken as it cooks, and served on the side for extra punch. To ensure tender, flavourful meat, brine the chicken beforehand with salt and spices. It’s a Southern classic worth discovering again and again.

4. Indian-Spiced Chicken Skewers with Curry Potatoes and Raita Sauce

We’ve all had dry chicken skewers at least once. Want the secret to juicy and flavourful skewers every time? Mayonnaise! It helps the Indian-spiced marinade stick to the pieces of chicken breast. Plus, because it’s thicker than oil, the marinade won’t drip through the grates as your skewers cook. Serve them with a cooling yogurt raita and aromatic potatoes for a meal you’ll want to make all summer long.

5. Spicy Lemon-Pepper Grilled Chicken Wings

You may be used to baking chicken wings in the oven, but they come into their own on the grill during summer, especially when coated with baking powder before cooking. Why? This raises the pH level in the chicken’s skin, helping the proteins break down to form a crisp and golden coating. Once cooked, toss the wings in a rich sauce made with habanero pepper, lemon, pepper and butter, and then use it for dipping, too.
