Monday: Cream of Sweet Potato and Coconut Milk Soup

The fall season means it’s soup season, and what could be better than this sweet potato soup? Creamy to perfection thanks to the inclusion of coconut milk, this recipe is also budget friendly, so you don’t have to break the bank for tonight’s dinner!

Tuesday: Hamburger Steak with Broccoli Pea Mash

Hamburger steak is a diner classic, and it’s so simple to recreate at home. Coated in a flavourful onion and wine glaze, the addition of the broccoli and pea mash (so easy to make!) brings a nice dose of colour to the dish.

Wednesday: Indian-Style Chicken

Indian food always brings warmth, flavour and comfort come dinnertime. And this non-traditional but Indian-inspired dish boasts spices like ginger, cumin and curry powder, is a great way to use up chicken breasts, and is ready in under 30 minutes.

Thursday: Trout Soup with Cilantro

Looking for a quick and easy recipe? This fish soup may only require 8 ingredients, but it is still bursting with flavour and warmth. It has good veggies like spinach and red pepper, a flavourful broth, and includes a hot pepper for added heat. What’s more, it cooks in just 10 minutes!

Friday: Warm Legume and Fried Tofu Salad

If tofu is often your protein of choice, this salad is sure to hit the spot. Also consisting of chickpeas and white beans, as well as veggies like squash and tomatoes, it is a unique take on your usual bean salad. Topped with the tofu, salty feta and crunchy sunflower seeds, it’ll become a fast favourite.
