April 3 to 7, 2023: What to cook this week

In April, the days may be getting longer and the weather milder, but comfort foods that fill you up with delicious ingredients are still in order. Among our selections this week: a savoury soup-meal, a vegetarian stew and a fried rice dish will delight your entire family.

Monday: Curried Sweet Potato Soup

This vegetarian soup-meal is sure to be a hit with people who have embraced meatless Mondays—especially considering that the leftovers can be frozen. The potato and sweet potato-based soup is topped with a spicy mix of chickpeas and cashews previously roasted in the oven on a baking tray. Also, garnish each bowl with a dollop of creamy yogurt and fresh cilantro. Comfort food at its best!

Tuesday: Ramen Noodles with Kimchi and Pork

Keeping budget-friendly recipes in mind, make the most of this quick and easy, full-bodied dish. Boost the flavour of ground pork with store-bought kimchi, a Korean condiment made of lacto-fermented vegetables, and ramen noodles. For an even more complete meal, serve the dish with soft-boiled eggs. The runny yolk will bring everything together. A shortcut:Cook them in the water used to prepare the noodles.

Wednesday: Spinach and Herb Stew with Crispy Lentils

Legumes are a favourite go-to when you want to give your family a vegetarian meal full of nutrients. Roasted on a baking tray to crisp them up, lentils are the stars of this dish. Combine them with a spinach and herb mixture, previously wilted in a rich broth, then divide everything onto plates and serve with rice. A hearty dish that you will want to make regularly!

Thursday: Lemon-Caper Haddock with Cucumber and Fennel Salad

This healthy fish recipe is welcome on anybody’s table and perfect for weeknight suppers. Simply cook the haddock fillets in the oven with a drop of butter, capers and lemon zest. On the side, mix together cucumber, fennel and shallot for a crunchy salad bursting with freshness that will please the whole family.

Friday: Chicken, Mushroom and Ginger Fried Rice

On Fridays, you want to eat well while spending as little time as possible in the kitchen. This fried rice dish meets all your criteria! To make things easier, use cold leftover rice that you cooked earlier in the week. Mix it with chicken, bean sprouts and mushrooms, infusing everything with soy, ginger and honey sauce. A new classic is born!
