With the construction holiday well on its way, let’s go travelling with our selection of dishes from all over the world. On the menu: Mexican tacos, Italian pasta, Thai flavours and much more!

Monday: Veggie Tacos with Melty Cheese

This vegetarian recipe is ideal to spice up a meatless dinner. Use the barbecue to grill poblano peppers and to melt the cheese over the tortillas. In addition to the pomegranate seeds, sprinkle each taco with pumpkin seeds coated in a spice mix inspired by Mexican mole sauce. Topped with sour cream, it’s devilishly scrumptious!

Tuesday: Warm Couscous Salad with Green Beans and Merguez Skewers

Mediterranean food is in the spotlight with this summer recipe designed to please the entire family. This richly flavourful dish stars merguez sausages roasted in the oven on a sheet pan with vegetables. Serve them with an aromatic orange-flavoured couscous, blanched green beans and a herb garnish full of freshness. An easy dish fit for dreams of sunny destinations.

Wednesday: Thai Grilled Salmon with Mango and Cucumber Salad

The secret to this Thai-inspired recipe is to start in advance so that the salmon has enough time to soak in all of the marinade’s spicy flavours. Combining ginger, soy sauce and paprika, the mixture is also used to glaze the fish fillets as they cook on the barbecue. Grill them skin down, over indirect heat. Serve the dish with a refreshing salad that marries mango and cucumber.

Thursday: Cherry Tomato and Zucchini Spaghetti

Tomatoes, zucchini, fresh basil: these essential ingredients of Italian cooking are the stars of this pasta dish. Enjoy the abundance of these summer vegetables (as well as their affordability) that offer the best of the season. This simple, colourful meal will bring everyone together on the terrace for a gorgeous night off. Viva la dolce vita!

Friday: Shrimp Skewers with Piperade

Piperade is a Basque culinary specialty made with peppers, onion, tomato and paprika. This recipe pairs it with shrimp grilled on the barbecue in their shells. This way, the crustaceans will be juicier and more tender—plus, it helps to prevent them from sticking to the grill. Super easy to make, here’s a weeknight recipe that’s delicious with a side dish of roasted potatoes or toasted bread.
