September 25 to 29, 2023: What to Cook This Week

From a General Tao Tofu to a Ravioli Ratatouille, the five recipes featured here are meal suggestions the whole family is sure to love. Check out what you’re having for dinner this week!

Monday: General Tao Tofu

This vegetarian version of General Tao is an absolute favourite for everyone at the table. The protein at the heart of this dish is tofu. Dice it, coat it in cornstarch, then pan fry it until golden brown. Add a gingery sweet and sour sauce. This is a truly satisfying, economical and quick meatless meal—and an excellent way to start the week!

Tuesday: BBLTT Sandwich (Bagel-Bacon-Lettuce-Tuna-Tomato)

Sandwiches are not only a good option at lunchtime. They also make great dinners on busy weeknights. This variation on the BLT is super easy to make and was developed to introduce young people to cooking. The bacon is cooked in the oven and the tuna mixture is ready in no time. The recipe, which makes two servings, is easy to double or triple.

Wednesday: Chicken, Bell Pepper and Mango Stir-Fry

This Asian-flavoured stir-fry is made with chicken breast halves, but you could also take the opportunity to use leftover cooked chicken. One way or another, coat the meat and vegetables with a thick sauce that combines chicken stock, Vietnamese sauce, maple syrup and sriracha. Garnish each plate with pieces of mango and fresh cilantro, and serve the dish with rice. A delicious, colourful meal that’s bound to whet your appetite.

Thursday: Potage Crécy (French Carrot Soup)

Colder evenings announce the return of comforting soups. The whole family will be happy to sit at the table with a warm bowl of potage Crécy, topped with croutons and parsley. Carrots form the base of this classic of French cuisine. The velvety texture is achieved with the addition of a potato instead of cream. You can easily double the recipe and freeze it. Leftovers also make excellent lunches.

Friday: Ravioli Ratatouille

It’s pure joy to eat this cheesy pasta dish to crown the end of a busy week. It’s even better when you’ve been able to cook the dish in advance—yes, you can freeze it!—and you just need to put it in the oven to bake. If not, you can always save time the night before by making the speedy ratatouille that’ll be served with store-bought raviolis. But whatever you end up doing, one thing is certain: The whole family will love this recipe.
