October 12 to 16, 2026: What to Cook This Week

What’s for dinner? We’re answering the famous question with recipes like pork chops with squash, eggplant and kale pasta and more for a delicious week ahead. Which ones will become fast favourites in your home this fall?

Monday: One-Pot Pork Chops with Acorn Squash

Who doesn’t enjoy weeknight pork chops? But if you’re looking for a new way to serve them, we suggest acorn squash and Parmesan, cooked in a single pan for quick and easy cleanup. It’s an especially cozy dish, perfect as the cool weather kicks in.

Tuesday: Pasta with Eggplant, Kale and Pancetta

In this recipe, it’s the spice mix that really brings flavour to the sheet-pan baked vegetables and chickpeas. Use this mixture on the chicken thighs as well, which truly helps make dinner prep an effortless affair.

Wednesday: Tofu and Mushroom Banh Mi

Add some colour to your menu tonight with banh mi filled with tofu, mushrooms and julienne vegetables. The tofu and mushrooms are coated in a sweet and spicy sauce, while the baguette is brushed with mayonnaise and topped with cucumber, coriander and chili peppers. It’s a vegetarian dish that won’t have you missing the meat!

Thursday: One-Pot Ginger Chicken and Ginger Rice

This recipe is inspired by Hainan chicken, a Southern Chinese dish. In the traditional version, the chicken is cooked slowly in broth that’s later used to cook the rice in. The same principle is applied here, preparing everything in the same pot. The ginger sauce brings a delicious finishing touch to this recipe.

Friday: Tuna Noodle Casserole

This comforting dish is perfect for a weeknight family dinner. Easy to prepare, it combines tuna, creamy mushroom soup, egg noodles and frozen green peas… and don’t forget the breadcrumb mixture on top! It’s a deliciously satisfying meal to enjoy now that the cold weather has officially hit.
