Potato and Tuna Croquettes with Pickle Sauce

Ingredients

    Pickle Sauce

  • 1/2 cup (125 ml) sour cream
  • 2 tablespoons (30 ml) mayonnaise
  • 1/4 cup (60 ml) dill pickles, drained and finely chopped
  • 4 small sweet pickles, drained and finely chopped
  • 1 tablespoon (15 ml) dill pickle juice
  • 1 tablespoon (15 ml) sweet pickle juice
  • Salt and pepper

    Potato and Tuna Croquettes

  • 2 cups (500 ml) mashed potatoes
  • 2 cans 170 g oil-packed tuna, drained
  • 1 egg 

  • 3/4 cup (180 ml) breadcrumbs
  • 2 tablespoons (30 ml) butter
  • 1 tablespoon (15 ml) olive oil

Preparation

Pickle Sauce

  1. In a bowl, combine all the ingredients. Season with salt and pepper. Cover and refrigerate. 


Potato and Tuna Croquettes

  1. In a bowl, combine the potatoes, tuna, egg and 60 ml (1/4 cup) breadcrumbs. Season with salt and pepper. Place the remaining breadcrumbs on a shallow plate.
  2. Shape the potato mixture into eight patties of about 75 ml (1/3 cup) each. Press on both sides in the remaining breadcrumbs.
  3. In a large non-stick skillet, brown the patties in the butter and oil for about 3 minutes per side or until golden brown. Serve with the pickle sauce and a green salad.
