Potato and Tuna Croquettes with Pickle Sauce
Ingredients
- 1/2 cup (125 ml) sour cream
- 2 tablespoons (30 ml) mayonnaise
- 1/4 cup (60 ml) dill pickles, drained and finely chopped
- 4 small sweet pickles, drained and finely chopped
- 1 tablespoon (15 ml) dill pickle juice
- 1 tablespoon (15 ml) sweet pickle juice
- Salt and pepper
Pickle Sauce
- 2 cups (500 ml) mashed potatoes
- 2 cans 170 g oil-packed tuna, drained
- 1 egg
- 3/4 cup (180 ml) breadcrumbs
- 2 tablespoons (30 ml) butter
- 1 tablespoon (15 ml) olive oil

Pickle Sauce
- In a bowl, combine all the ingredients. Season with salt and pepper. Cover and refrigerate.
Potato and Tuna Croquettes
- In a bowl, combine the potatoes, tuna, egg and 60 ml (1/4 cup) breadcrumbs. Season with salt and pepper. Place the remaining breadcrumbs on a shallow plate.
- Shape the potato mixture into eight patties of about 75 ml (1/3 cup) each. Press on both sides in the remaining breadcrumbs.
- In a large non-stick skillet, brown the patties in the butter and oil for about 3 minutes per side or until golden brown. Serve with the pickle sauce and a green salad.

This is the perfect recipe for using leftover mashed potatoes.
