Preparation

  1. In a food processor, purée all the ingredients for about 2 minutes until very smooth and creamy. Spoon into a bowl.
  2. Cover and refrigerate for about 4 hours or until chilled and slightly set.

Note

Buffalo ricotta, made from water buffalo milk, is found in certain grocery stores and at most cheese markets. If unavailable, use standard cow-milk ricotta cheese and omit the milk in this recipe.

  1. Good in place of ice cream. Great as accompaniment to Ricardo's "White Wine-Poached Peaches" - however, this recipe for the peaches is no longer available on the website !
