Morello Cherry and Chocolate Jam

  1. In a saucepan, bring the cherries, their juice, and the sugar to a boil. Simmer gently for about 20 minutes. With a slotted spoon, remove the cherries from the pan. Set aside. Reduce the syrup until only 125 ml (1/2 cup) remains. Add the cocoa powder and bring to a boil, whisking constantly. Put the cherries back in the syrup. Cover and refrigerate until the mixture is cooled and completely chilled.


  1. In a small sundae cup, place 1 or 2 scoops of ice cream. Top with the cherry jam. Cover with diced brownies. With a pastry bag fitted with a fluted tip, pipe a rosette of whipped cream. Sprinkle with chocolate shavings and top with a fresh cherry.


Good to know

Smaller and slightly less sweet than Bing cherries, Morello cherries are traditionally used in Black Forest cakes. You can easily find them canned or in jars in most supermarkets. Very useful when it comes to make a dessert out of the blue.
