5 Desserts That Take the Maple Out of the Sugar Shack

After being enjoyed in taffy and pudding cake in abundance, maple syrup is stepping out of the sugar shack this spring to be featured in a selection of delicate and elegant sweet treats. We're trading in the checkered tablecloth for lace to savour the product in all its finesse with these five desserts.

1. Chocolate, Mascarpone and Maple Cupcakes

The maple flavour isn’t just hinted at in this dessert; it takes centre stage. It appears in the form of a vanilla-flavoured syrup to soak the moist cocoa and almond powder cupcakes. And it’s the same syrup that is poured into each well of the icing, made of mascarpone cheese whipped cream, when it’s time to serve. Doubly exquisite!

2. Maple-Butter Cookies

These little cookies are a hit on every occasion. They’re generously filled with maple butter whipped with unsalted butter, giving it a firm texture that prevents it from leaking from the sides. The cookies are impeccable: crispy on the outside and creamy on the inside. They’re even better than the maple leaf cookies of our childhood.

3. Maple-Pecan Ice Cream

With this recipe, we’re moving away from the sugar shack and gently approaching summer. Maple takes centre stage in this ice cream flavour, which is always one of the most popular (the tub at the ice cream shop is always empty!). Prepare a custard made of maple and brown sugar, churn it in your ice cream maker, then mix in maple syrup-candied pecans. All that’s left is to scoop this beautiful marbled ice cream into a cone.

4. Maple and Blueberry Pavlova

Maple syrup flows abundantly in this meringue-based dessert. In its centre sits a blueberry jam made with maple syrup, as well as a maple pastry cream that’s lightened with whipped cream for added delicacy. Once baked, the shell becomes crispy while the inside remains soft. This contrast in textures is just sublime.

5. Maple and Pear Cheesecake

Life is sweet with this cheesecake, made with a speculoos cookie crust with a hint of cinnamon and white sugar is replaced with maple sugar. Elevate its elegance with thin slices of pears brushed with maple syrup before roasting and placing them on the cake. This way, you can fully enjoy the nuanced maple flavour in each bite.
