Autumn-Inspired Dips and Bites

At the dawn of autumn, you probably feel like cooking dishes as colourful as the leaves on the trees. Orange squash, red apples and yellow corn can be found in these dips and toppings best enjoyed with crisp crackers. The groups of ingredients repeat themselves in two completely different recipes. Enjoy on your deck or balcony, with a sweater over your shoulders.

Pair #1: Squash + apples + almonds 

Celebrate the harvest season by cooking seasonal fruits and vegetables bought at the farmers’ market or picked yourselves. Squash and apples are at their best in autumn; it’s therefore the perfect time to enjoy them!

The ingredients
  • Butternut squash: Soft and sweet with a light buttery flavour.
  • Cortland apples: Sweet, moderately tart and perfect for cooking. They don’t brown when raw.
  • Almonds: Crunchy texture with a crisp bite.
  • Almond butter: Smooth and creamy texture that holds the other ingredients together.
  • Spices and aromatics: Lemon juice, maple syrup and cumin seeds.
  • Crackers: A rosemary flavour that pairs beautifully with the apple and the squash.

IN A DIP 

For this dip, purée the squash and blend it with the almond butter. Serve in a shallow dish and top with diced apple, almonds and toasted cumin.

IN A BITE

For this bite, use the same ingredients, but cook the fruits and vegetables into a chutney, and then spoon onto a cracker and top with the remaining garnishes.

Pair #2: Corn + chorizo + cheese

Summer hasn’t had the last word yet. Using corn, one of the last summer vegetables whose season stretches into early fall, prepare this bite and dip as a final farewell to the warm season.

IN A DIP

Make this warm dip for the first cool days of the season. Pulse the corn in the food processor with cream cheese and cheddar, then layer with chorizo in a baking dish. Bake for a few minutes in the oven.

For this bite, blend the cheese into a smooth purée and then mix in the corn and diced chorizo. Top with fresh chives for brightness. Enjoy these cozy little bites while watching the leaves fall.
