1. Remove the net
We recommend discarding it before boiling, as it can sometimes be difficult to remove it once the ham is cooked. (Although it is safe to cook with it if you prefer.)
2. Desalt the ham
Place the ham in a large pot and fill it with cold water until covered. Bring it to a boil and let it simmer gently for 20 minutes. Discard the water. Add some more cold water and let simmer for another 20 minutes.
3. Cook the ham
Once desalted, add more cold water and let the ham simmer for 2 hours or until the meat falls off the bone.
4. Save the broth
Give it a taste. It won’t be too salty, and therefore will be a great base for a soup or can be thickened with other ingredients to create a delicious sauce to go with your ham.
5. Remove the rind and bones
Wait 15 minutes for the ham to cool before handling it. Then, separate the meat from the fat and bones using your hands.
6. Serve and enjoy
Place the juicy pieces of meat on a platter and serve to your family or guests!
