February 5 to 9, 2024: What to Cook This Week

This week, put pantry and freezer ingredients to good use, cooking delicious recipes that will do you—and your wallet—a world of good! Vegetarian chili, carbonara pasta, chicken gratin and other nutritious dishes are waiting for you on the table!

Monday: Vegetarian Chili with Edamame

You’ve got molasses, tomatoes and red beans in your cupboards? It’s a good start for cooking this amazing chili. The recipe is quick to make and promises to please the entire family—plus, it can be doubled easily! Serve the leftovers for lunch the next day or freeze some for an upcoming meal.

Tuesday: Fish Soup with Tomato and Fennel

A good way of getting people to eat fish, especially those who don’t like it very much, is to serve it as a hearty soup. Choose a white-fleshed variety and add it to a broth that marries the tangy taste of tomato with the aniseed flavour of fennel. Garnish each bowl with fennel fronds, lemon juice and a drizzle of olive oil. Serve with a piece of toasted bread.

Wednesday: American Spaghettini Carbonara

With its short list of ingredients, and speedy preparation and cooking time that don’t exceed 10 minutes each, this dinner idea will delight several people on busy nights. Cook the pasta and bacon, then add them to a mixture of eggs, cream and Parmesan. Simple, efficient and savoury!

Thursday: Chicken-Cauliflower Gratin with Kale and Blue Cheese

Two strong cheeses, Comté and Blue, have the spotlight in this recipe. Spread chicken breasts with a mixture of cauliflower and hazelnuts, then top with the Comté, a cheese variety from the Gruyère family, before putting everything in the oven. Serve this original dish full of character with kale browned under the grill.

Friday: Super Cool Burger

Bring smiles to the table with this recipe that will satisfy all appetites. Make each patty by sandwiching cheese curds between two thin patties, pressing both sides together. Pile up the garnishes—bacon and pickles and chips, oh my!—and finish assembling the burgers with a generous layer of cheese sauce before closing with the bun tops. Absolutely decadent!
