January 27 to 31, 2025: Budget Recipes to Cook This Week

What’s for dinner this week? We’ve got five meal ideas for you, made with simple, affordable and easy-to-prepare ingredients, from a warm tofu salad to a cheesy sausage sandwich!

Monday: Warm Legume and Fried Tofu Salad

This vegetarian recipe goes perfectly with the cold season, in addition to bringing colour to your meal. Golden-fried tofu is placed on a spicy mixture of legumes and vegetables, including diced butternut squash.

Tuesday: Sesame Beef and Snow Pea Stir-Fry

An Asian-inspired sauce, caramelized beef, crunchy vegetables; what more could you want? This stir-fry—teeming with warm sesame flavours both in the sauce and as a garnish—is quick to make and, even better, can be prepared in a single frying pan for easy cleanup!

Wednesday: Pineapple Roast Chicken with Lemony Pearl Couscous

If you’re looking for a tasty meal the kids will approve of, you can’t go wrong with this recipe. The chicken is cooked in a sweet and tangy pineapple sauce, served alongside bright and lemony couscous and a vegetable of your choice. It’s easy to make and comes together in a flash.

Thursday: Fennel and Fish Soup

Are you looking to eat more fish on a regular basis? Surprise the family with this heart-warming soup; simply add the mahi mahi (or any other white fish) to a delicious broth with vegetables, including fennel, and kidney beans, for a healthy and satisfying weeknight meal.

Friday: Sausage, Spinach and Cheese Sandwiches

This original sandwich puts the spotlight on Italian sausage that’s crumbled rather than used whole. Also add spinach and mozzarella, which is then melted on top of the sandwich under the broiler. Serve it warm with a side salad or fries (it’s Friday night, after all!) and the whole family will be thrilled.
