Just cook them with baby potatoes in a foil packet on the grill (yes, grilling season is already here!), and then make a simple gravy with condensed chicken broth and butter. Wednesday: Chicken with Chickpeas and Crispy Pita (Fatteh)

Nachos aren’t usually a satiating dinner idea, but this recipe for an elevated, Middle Eastern version definitely is! Fatteh is a crispy pita dish with layers of perfectly spiced chicken and chickpeas and a garlicky yogurt sauce. Make this golden fish and chip dish effortlessly in the air fryer. Along with asparagus, you’ve got a light and crispy meal that admittedly isn’t authentic, but is a more healthful (but no less tasty!) alternative to the fried version without the excess oil.

Friday: Caesar Pizza

Hesitating between pizza and salad? Now you don’t have to! For this recipe, simply swap the traditional pepperoni and tomato sauce for a fresh tortilla pie loaded with chicken, bacon, romaine lettuce, capers and Parmesan cheese. It’s a Friday night dish you can feel good about.
