1. Make croutons
Stale croissants make for superb salad croutons. Simply cut them into cubes and toast them in a 350℉ oven for 10 to 12 minutes, or until golden. They’ll become very crunchy and will feel lighter than any bread-based crouton you’ve tried before. So each time you have leftover croissants, chop them up, put them in an airtight, resealable bag and keep them in the freezer until you eventually have enough to make croutons.
2. Make French toast
By cooking day-old croissants like French toast, their dry texture won’t matter given that they’ll be soaked in an egg and milk mixture and then toasted in a pan. You can switch up the toppings and flavours, or serve them with caramel or a fruit coulis.

3. Make a loaf
You can use leftover stale croissants to make a delicious croissant loaf for breakfast. Soak the croissant pieces in milk and eggs (like you would in a sweet bread pudding), and then add cheese before pouring it into a loaf pan and baking it in the oven. For an even more indulgent version, toast a few slices and serve with ham.

4. Toast them
Croissants can get a second life when they’re sliced and toasted in the oven or toaster. Enjoy them at breakfast with jam or even as a sandwich to suit your tastes: cold cuts and mustard, chicken and mayonnaise, or even a Nordic shrimp salad.
5. And stuff ’em!
Prepare an indulgent stuffed croissant by adding apricot jam and an orange ricotta filling. Then bake these loaded pastries in the oven until golden. They’ll become very crispy, even if they are a bit dry.
