What to Do with Leftover Tofu

If you still have some tofu left over from a recipe, there are a few ways to use it up instead of tossing it in the compost bin. Here are four suggestions on cooking with it, even if there is only just a small amount.

1. A half-and-half recipe

Whether in a shepherd’s pie, a pasta sauce or in burger patties, you can easily replace part of the ground meat with crumbled tofu. It’s a great way to lower the cost per serving. Try it in this mini meatloaf with barbecue sauce.

2. Soup

3. A smoothie

4. Marinated tofu

Marinate tofu for four hours in a lemony mix with garlic and red pepper flakes, and you’ve got a tasty way to use up excess tofu. You can serve the plant-based protein either crumbled as a topping or as bites during happy hour. Easy peasy!
