July 4 to 8, 2022: What to Cook This Week

What’s for dinner this week? From fresh zucchini fritters to pork on the grill, these five recipes are peak summer! We’re certain you’ll be getting requests to make them again and again for the rest of the season.

 

This week’s menu was compiled based on the products featured in this week’s IGA Quebec flyer. How practical!

Monday: Zucchini and Mint Fritters

Zucchini, mint, dill, feta… These Greek-inspired fritters are bursting with freshness. Enjoy them on their own with a side of rice or a salad, or you can serve them in a burger bun or even a pita pocket.

Tuesday: Grilled Pork Chops with Lemon Parmesan Salad

During summer, dinner is oftentimes a piece of meat with a side salad. Simple, but that doesn’t mean it can’t be spectacular! These tasty pork chops with a kiss of honey are served with a salad tossed in a zingy lemon and cheese dressing. Delicious!

Wednesday: Zucchini Spaghetti with Rosé Sauce

This dish is half spaghetti, half zucchini noodles, and all taste! Bonus, you can use tasty tomatoes two ways: in the rosé sauce, as well as roasted as a garnish. The perfect pasta recipe that doesn’t feel too heavy; it’s ideal for a summer’s day!

Thursday: Burrito Bowl

Kids (big and small) love burritos. And with this recipe, you get the great tex-mex taste, minus those messy tiny hands at the end of the meal. We suggest keeping all the toppings on the table so that everyone can customize their own bowls.

Friday: Mezze-Style Tofu with Onion Confit

Sure, mezzes are typically an appetizer platter, but we say they can also make a great and plentiful meal. This plate is loaded with onion-confit-tossed tofu, roasted cauliflower, cucumber, avocado, hummus, tabbouleh and marinated red bell peppers. It’s a simple meal that comes together quickly when you’re ready to take it easy for the weekend.
