March 27 to 31, 2023: What to cook this week

Let’s begin the week with meatless Mondays in mind and a delicious frittata. And why not end it on a comforting note, with a hamburger steak? In between, fresh flavours and textures are on the agenda.

Monday: Zucchini and Sun-Dried Tomato Frittata

Everyone loves clean-out-the-fridge recipes that let you sort out the vegetable crisper. This frittata uses a dozen eggs, zucchini and sun-dried tomatoes in oil. A touch of green is added with a side of arugula salad sprinkled with Parmesan shavings. A quick and easy, super-tasty, budget-friendly meal!

Tuesday: Cod with Pesto and Grapefruit Couscous

A fresh and nutritious meal, brightened with a touch of acidity from the grapefruit, this recipe has everything going for it. Citrus segments are used to garnish the pesto-green couscous with peas, while the juice is drizzled over the fish. A few basil leaves complete this colourful and savoury dish.

Wednesday: Rigatoni with Creamy Cauliflower and Chicken Sauce

You want to cook a wholesome meal for your family, while spending as little time as possible in the kitchen? Now, these are two excellent reasons to try this recipe! Serve the pasta with a gooey sauce combining chicken, cauliflower, cream, spinach and Parmesan. Garnish each plate with golden pan-fried breadcrumbs and a hint of cheese. A delicious and easy dish to please everyone.

Thursday: Breaded Tofu Cutlets

The cutlets in this vegetarian dish consist of sliced tofu. Each slice is coated in a mixture of panko breadcrumbs, Montreal steak spice, curry powder and garlic powder. A Parmesan and herb garnish as well as a dollop of lemon mayonnaise pimp up every mouthful. This versatile recipe can also be enjoyed in a sandwich—which can also be made with chicken!

Friday: Hamburger Steak with Onions

Add breadcrumbs, milk, eggs and paprika to ground beef and create softer, moister patties that are still easy to shape with your hands. Golden pan-fried onions and a speedy sauce complete this savoury meal, served with steamed or puréed potatoes. Comfort food at its best!
