If you need something tasty to help you climb over that mid-week hump, then this delicious Italian-inspired meal is right for you. It features tender chicken in a creamy sauce of sun-dried tomatoes, garlic, baby spinach, cream and Parmesan, making it a recipe worth adding to your weeknight rotation.

Thursday: Meal-Sized Air Fryer Merguez and Kale Salad

Hearty salads like this one always hit the spot. They’re a great weeknight option as they usually require minimal cooking, are loaded with tasty ingredients and have great textural contrast. In this recipe, cook the sausages, tomatoes and onions together in the air fryer and then combine with kale, golden raisins and pita chips. Toss in a dressing consisting of plain yogurt, oil and lemon zest, and dinner is served!
