Monday: Vegetarian Tempeh Sandwiches

Our go-to for an uncomplicated dinner? A sandwich! This meatless version of a BLT takes tempeh that’s been marinated in soy sauce, maple syrup and vinegar, and then grilled. Load it up between two pieces of bread with tomato, lettuce, avocado and mayo, and you’ve got a no-fail suppertime sammie.

Tuesday: Soba Noodle Salad with Air Fryer Flap Steak

The warm season is all about salads, but nix the usual pasta salad for this fresh and hearty version. Bursting with toothsome soba noodles, leafy kale and cabbage, crunchy cucumber and zucchini, sweet Asian pear and perfectly cooked air fryer steak, you’ll be making this dish all summer long. 

Wednesday: Spicy Chicken with Cantaloupe and Chorizo

The combination of chorizo and crushed red pepper flakes is all you need to add some heat to a meal. Seasonal cantaloupe brings a burst of freshness to the chicken dish, thanks to both its taste and bright colour. It’s a pretty effortless meal that’ll be on the table in just 30 minutes.

Thursday: Shrimp and Peanut Curry

For a refreshingly light Thursday night meal, try this creamy and vibrant green curry, loaded with a good amount of cilantro, green onions, ginger and coconut milk. Add shrimp and peanuts for heartiness and enjoy with rice for a complete meal.

Friday: Pork Patties with Grilled Pineapple and Broccoli

Can you resist a meal that comes together in a flash? We sure can’t! This savoury pork topped with hoisin sauce pairs wonderfully with the sweetness of the grilled pineapple; enjoy it with a side of broccoli and rice.
