5 Dessert Bread Recipes to Eat All Day Long

With dessert breads, a cross between a cake and a muffin, you can treat yourself any time of day. They’re just as good for breakfast as they are for a coffee break or dessert, served with a scoop of ice cream. Here are five to enjoy whenever you please.

1. Blueberry Coconut Bread

This loaf has a delightfully moist texture, due to the good amount of powdered sugar used, which dissolves into the batter. Lemon juice is added for subtle flavour and acidity, which also helps the bread rise, much like buttermilk would. Coconut fans: You’ll enjoy the inclusion of coconut milk and oil into the batter, as well as shredded coconut as a topping.

2. Morning Glory Bread with Whipped Honey-Cinnamon Butter

Although it can be enjoyed as a dessert at the end of a meal, this morning bread is hearty enough to be a complete breakfast, given that it’s loaded with grated carrots and apples, dates, dried fruits and seeds. It was named after the restaurant where it was invented in the late 1970s to appeal to customers who were increasingly seeking healthier eating options. Pop a slice in the toaster and spread some whipped honey and cinnamon butter on it. There’s nothing better for a, well, glorious morning!

3. Chocolate Pumpkin Bread

Yes! Squash season is fast approaching, and that means you’ll soon have a craving for pumpkin spice everything, which can be satisfied with this loaf that also includes large chocolate chunks. The crumb is incredibly moist, due in part to the inclusion of sour cream. The top of the loaf is covered with a cocoa-spice crumble for a delightful textural contrast.

How to convert a dessert bread recipe into muffins

You can easily turn dessert breads into muffins by adjusting the baking time. You can even double the recipe and bake once, to yield one loaf and a dozen muffins, all without having to dirty any extra dishes!

 

Preheat the oven to 350°F (180°C) and place 1/4 cup (60 ml) of the batter into the cavities of a muffin tin lined with silicone or paper liners. Bake for 20 to 25 minutes or until a toothpick inserted in the centre of the muffins comes out clean. Depending on the recipe, you’ll get 12 to 16 muffins.

4. Apple Pecan Bread with Maple Sauce

This delicious loaf is loaded with large apple pieces and pecans. Once it’s baked, poke small holes into the cake and pour a cream and maple sauce over it. Then put the cake back into the oven so that the sauce can soak through. It’s even better with a scoop of ice cream (if you’re having it for dessert, of course!).

5. Zucchini and Lemon Poppy Seed Loaf

Lemon loaf is a classic, made even more moist with the addition of harvest zucchini. Since the vegetable is 94% water, it hydrates the batter in an incomparable way. To enhance the lemon flavour, soak the bread in a lemon syrup after baking, adding a sweet and crispy layer to the surface. It’s just as tasty as the standard lemon poppy seed loaf!
