What would replace the eggs?

My son is allergic to eggs. Are there any alternatives?

Egg replacers are sold in many natural food and grocery stores. The instructions for use are listed on the package. You can make your own egg replacer at home with flax seeds. Here’s how:

  1. Put 75 ml (1/3 cup) flax seeds in 750 ml (3 cups) water in a saucepan. Bring to a boil and simmer for about 30 minutes.
  2. Strain while still hot through a fine mesh sieve, collecting the gooey liquid and separating it from the seeds. Let cool. You can then whip the liquid like egg whites.
  3. Unbeaten, this egg replacer freezes well. For convenience, freeze it in ice-cube trays: one cube equals one egg white.
