May 10-14, 2021: Quick Grilling Recipes for This Week

As summer inches closer, we’re using our stovetops and ovens less and less and giving the grill its moment in the sun! Weeknight dinners now come with grill marks and smoky flavours, and are best enjoyed on the balcony or in the backyard. Here are a few recipes to try this week, weather permitting.

Monday: Grilled Asparagus with Beet Hummus and Curried Chickpeas

This “beautiful feast for the eyes” (as user Dianne L. recently put it) is a colourful dish that’ll make the kids want to eat their veggies! It also proves that grilling isn’t only meant for meat, that vegetarian dishes can also get the BBQ treatment with stunning results.

Tuesday: Grilled Pork Chops and Quinoa with Broccoli and Asparagus

Pork chops are a regular weeknight staple, but when they’re tossed onto the grill, they become something special! Coated in a sweet and savoury sauce and served with quinoa and veggies, this is a family meal you’ll be making all spring and summer long.

Wednesday: Shrimp Skewers with Piperade

Grab some tomatoes, bell peppers and onions, and you’ve got a Basque dish known as piperade. We serve it here with grilled shrimp for a simple, colourful and tasty recipe worthy of a weeknight.

Thursday: Quick and Easy Portuguese-Style Chicken

We obviously enjoy tender, slow-roasted Portuguese chicken! But when time is limited after a busy weekday, you want all of the taste but none of the hassle. So satiate that craving with this recipe that requires just seven ingredients.

Friday: Spicy Beef Skewers

It’s Friday night and we promise dinner will be on the table in under an hour, thanks to this 15-minute marinade. Sweet, spicy and tangy, flavours are firing on all cylinders tonight and these beef skewers will become a new favourite as the warmer weather gears up.
