February 21 to 25, 2022: 5 Ways to Enjoy Winter Veggies This Week

Even though we’re in the middle of winter, there are so many vegetables that are at their peak right now: cabbage, kale, spinach and more… There’s a wide variety to add to your grocery list for the week! Check out these five recipes below that the whole family will love.

Monday: Pulled Pork Burgers

Cabbage is a can’t miss winter vegetable because it can be enjoyed both cooked and raw. We particularly enjoy it the latter way, especially in a tasty, crunchy slaw served in a classic pulled pork burger.

Tuesday: Quinoa and Tofu with Kale Salad

We love a good, hearty salad that’s filled with flavour and texture. Instead of the usual lettuce, we used kale as the base and topped it with tofu, grains, fruit and seeds for a salad that definitely eats like a meal.

Wednesday: Trout with Beet Salad

Rich in iron, fibre and vitamin C, spinach is an essential winter veggie that is oh-so good for you! Served in a salad with yellow beets (another seasonal ingredient!), it is just sublime alongside a white fish like trout.

Thursday: Giant Broccoli Meatballs

An awesome veggie that can be enjoyed in so many ways, broccoli is a staple in our weekly recipes. However, the kids may not see it as the beneficial food that it is. That’s why, sometimes, it’s okay to hide it in a meal they enjoy, like meatballs. They won’t even know it’s there!

Friday: Parmesan Crusted Sweet Potato, Red Cabbage and Sesame Pita Sandwiches

Like its green counterpart further up, red cabbage adds a perfect crunch to any burger or sandwich. But it also adds a good dose of colour to a dish, which is very much needed during colder, drearier months.
