Monday: Grilled Eggplant Stuffed with Chickpeas

We love veggies on the grill, and even more so when we try something off the beaten path! Enter this grilled eggplant stuffed with chickpeas and vegetables, taking vegetarian eating to a whole new level. A bit on the spicy side, the tahini-yogurt sauce brings a much needed coolness to the dish, and the sweet and sour pomegranate molasses is just addictive.

Tuesday: Sausage, Vegetable and Cheese Sheet Pan

Your trusty baking sheet is often the perfect cooking ally for busy weeknights, making clean-up a breeze! After all, who wants piles of dirty dishes to wash after dinner? This recipe is particularly fun to eat, due to the exciting combination of sausage, colourful veggies and cheese curds.

Wednesday: Meal-Sized Roasted Vegetable and Feta Salad

This dish not only tastes delicious, but is also a feast for the eyes! Bursting with colour and loaded with veggies like asparagus, Brussels sprouts and green beans, it’s a restaurant-worthy recipe made right at home.

We’re all looking for a few tasty recipes that also help us stay on budget. This simple pork dish isn’t too involved, boasts few ingredients and is bursting with flavour. Be sure to add it to your regular weeknight rotation.
