April 10 to 14, 2023: What to cook this week

Take advantage of Easter Monday to make a super-healthy meal bowl, then use Easter dinner leftovers to cook a new meal. Take your taste buds on a trip around the world and put together colourful plates with our delicious quick and easy recipes.

Monday: Buddha Bowl

Soba noodles, marinated vegetables, chickpeas and green beans are but a few of the ingredients that make up this Buddha bowl recipe. Add a garnish of mango, peanuts and cilantro, mix in the indispensable mayonnaise and peanut butter sauce, and you get a generous and colourful meal bowl, full of fun textures and flavours. Who can beat that?

Tuesday: Sheet Pan Potatoes with Ham and Vegetables

There are 1,001 recipes to use Easter ham leftovers. This one was inspired by spring, with its pink radishes, seasonal asparagus and store-bought potato croquettes that make great companions to the ham. Roast everything on a sheet pan, then sprinkle marinated shallots on top before serving the dish family style, in the middle of the table, for everyone to dip in. Oh, and don’t forget the Béarnaise sauce!

Wednesday: Potato and Tuna Croquettes with Pickle Sauce

A perfect way to use leftover mashed potatoes, this no-waste recipe is ready in 30 minutes. One egg, breadcrumbs, canned tuna and bang, you’re done! A favourite of children, this dish is served with a pickle sauce. Another advantage: you can easily double the recipe and freeze it! A good solution for a speedy future meal on a weeknight rush.

Thursday: Flatbread Pizza with Spinach and Feta

This Greek-style pizza will please everyone at the table. This quick and simple vegetarian recipe is so easy to make, even children will want to help make supper. Spread the ingredients, including spinach and feta, over pita bread or naan, then toss them in the oven until everything is golden brown. This pizza is also delicious with a splash of lemon that spruces up the flavours. Obviously, this also makes a perfect lunch.

Friday: Pineapple Roast Chicken with Lemony Pearl Couscous

Travel to the tropics for tonight’s dinner, with this pineapple chicken recipe served with pearl couscous. Pan-fry the pieces of fruit and mix them with chicken thighs in a succulent sweet and sour sauce made of ketchup, maple syrup and spices. We promise: this dish has the potential to become a favourite of your little ones!
