June 5 to 9, 2023: What to cook this week

This week, we’re cooking, roasting and grilling! On the barbecue and in the oven. Our selection of recipes includes a vegan meal, a grilled trout dish and stuffed pita sandwiches that should put everyone around the table in a great mood.

Monday: Pad Thai with Crispy Tempeh and Broccoli

This vegan version of pad thai contains no eggs and no fish sauce. These ingredients, which usually flavour this Asian dish, are replaced with a splash of lime juice that brings a dose of freshness. As for tempeh, the plant-based protein used in this recipe, simply dice it very finely, the size of a peanut, and serve it roasted and crunchy, as a garnish. A perfect meal for meatless Mondays.

Tuesday: Grilled Trout with Curried Bulgur, Asparagus and Cherry Tomatoes

Whether you caught it yourself or bought it at the supermarket, trout is an essential of summer. For this recipe, coat the fish with a mixture of oil and harissa. Cook it, along with the side vegetables, in a cast iron pan on the grill of the barbecue. Serve each plate with curried bulgur. This super easy dish is exactly what weeknight dinners call for.

Wednesday: Penne with Pancetta, Peas and Almonds

This recipe is ready in barely 30 minutes. Cook the penne al dente, then add green peas and Parmesan to a broth-based sauce that also includes pancetta and fennel. Divide the pasta among flat bowls and top with almonds, fennel leaves and Parmesan flakes. A refined-looking dish, full of flavour and freshness, that you’ll probably want to make again and again.

Thursday: Maple and Soy Chicken Legs

The way to cook this chicken leg recipe is in the oven, on a sheet pan—easy peasy! As for the accompanying bell peppers, red onions and zucchini, grill those on the barbecue. To finish off, use the barbecue to give nice grilling marks to the chicken legs. And take this opportunity to add a touch of flavour by slathering them with a maple, soy and hoisin sweet and sour sauce. A delight for everyone!

Friday: Ground Beef Pita Sandwiches

We think that this delicious recipe for stuffed pita will get unanimous approval from all the kids at your table. For the stuffing, mix ground beef, breadcrumbs and spices and fill pita halves. Slide everything in the oven until the bread is golden and the meat is cooked. Serve the sandwiches with spicy yogurt and a green salad on the side. Simple, quick and succulent!
