June 12 to 16, 2023: What to cook this week

With the return of beautiful weather and longer days, you want to spend less time in the kitchen and take advantage of the barbecue. This is what we’re offering this week with a diverse menu, starting with veggie wraps and concluding with double burgers.

Monday: Roasted Chickpea and Feta Wraps

You’ll be happy to start the week with an easy vegetarian dish that’s ready in less than 30 minutes. Assemble these generous wraps with pan-roasted chickpeas, sour cream, feta cheese and crunchy vegetables. With their overflowing toppings, these rolled sandwiches will keep until the next day and can also make a delicious lunch.

Tuesday: Grilled Steak and Shallots with Green Beans

This quick recipe is a perfect weeknight option. Baste top sirloin steak with a mixture of mustard and steak spices. Grill the meat on the barbecue and take the opportunity to throw a shallot papillote on the grill too. Cook until the shallots are tender. Serve with green beans and pumpkin seeds for a welcome touch of crunchy contrast. An easy meal that’ll make everyone at the table happy.

Wednesday: Spaghetti with Pecorino and Fresh Tomatoes

In addition to being nutritious, pasta dishes have the advantage of being quick to make. For this recipe, use fresh tomatoes two ways: diced and grated. They’ll go in the sauce, which also includes cheese, egg yolks, seasonings and pasta cooking water. Coat the spaghetti with the sauce and garnish the dish with garlic breadcrumbs, basil leaves and cheese. A simple dinner, full of freshness.

Thursday: Seared Fish with Vegetable Vermicelli

Add this healthy and flavourful dish to your list of weeknight favourites, especially as you can vary the recipe by using any white fish you choose. The base of the dish brings together rice vermicelli, grated vegetables and fresh cilantro with a sauce that combines mirin, soy sauce and sambal oelek. The finishing touch? Roasted onions. Divide the noodles among serving plates and top with the seared fish steaks.

Friday: Pork Burgers with Mango

What could be better than burgers on the barbecue to end the week on a high note? Well, going for it with two patties on each burger! Instead of using the same old condiments on the buns, have some store-bought or homemade tzatziki. Top off your garnishes with red bell pepper, cucumber and mango sprinkled with lime juice. The whole family will want more—even if they’re full!
