October 21-25, 2019: What to Cook This Week

What’s on the menu for the week ahead? We’re starting things off with a simple open-faced sandwich and closing out the week with a Friday night classic, and offering a few other comfy and cozy meal ideas in-between. Let’s get started!

Monday: Egg and Mushroom Open-Faced Sandwiches

Eggs for dinner? You bet! These tartines are stacked with cheese, mushrooms, lentils and a fried egg, making you rethink how you cook the breakfast staple.

Tuesday: Curried Pork Chops with Roasted Squash

Inexpensive, quick and easy, there’s a reason why pork chops are a weeknight staple! This autumnal recipe gives the star protein a curry kick and serves it with acorn squash and rapini.

Wednesday: Chicken and Cauliflower Mac and Cheese

No one is able to resist a bowl of mac and cheese, but what it packs in flavour, it sometimes lacks in any nutritional value. That’s why we’ve given this version a boost with the addition of chicken and cauliflower.

Thursday: Beef Stew with Green Vegetables

We’ve officially entered comfort food season, and what could be more cozy than a beefy stew? Best of all, cook this in your pressure cooker, and it’s ready in just 20 minutes!

Parmesan Cream and Sausage Pizza

When the end of the week rolls around, pizza usually comes standard. Warm, creamy and cheesy, whip up this version in your sheet pan and and watch it disappear.
