December 16-20, 2019: What to Cook This Week

There are only a few days left before the house fills up with the aromas of holiday cooking and guests knocking at the door! This week is a good time to focus on making simple dishes before finishing up all your festive planning (and shopping). Vegetarian pasta, Mediterranean-style fish and sheet-pan meals are all on the menu.

Monday: Pasta and Chickpea Ragù

This hearty, comforting dish is made with broth (chicken or vegetable), chickpeas, potatoes and short pasta. The soup should have a thick texture, similar to that of a purée or stew. Garnish generously with grated Grana Padano cheese and eat with a spoon!

Tuesday: White Fish and Olive Sauce Vierge

Whether you prefer haddock or sole, use your favourite white fish for this punchy Mediterranean-style dish. Simply brown it in a frying pan and serve it with a vierge sauce: tomatoes, shallots, black olives and capers. It’s light, delicious and incredibly easy.

Wednesday: Thai Veal Scaloppini

Scaloppini are small, very thin veal cutlets. Here, we’re inspired by Thai cuisine by coating them with crushed peanuts. The creamy coconut, lime juice and cilantro sauce is complex and rich, and complements soba noodles with snow peas and sautéed red peppers.

Thursday: Sheet-Pan Shrimp, Black Beans and Chorizo

We love sheet-pan recipes that are quick, easy... and avoid piles of dirty dishes after dinner. This one is particularly fun to eat, with its bright colours and peppy flavours. Eat it all as is or even serve it in tacos!

Friday: Beef Sub on Naan

Submarines? Pizza? A little bit of both. To end the week on a casual note, spread sautéed ground beef with onions and peppers on naan bread, add a little shredded mozzarella and bake for a few minutes. Finish with iceberg lettuce, tomatoes and balsamic vinegar. Simple and delicious!
