February 10 to 14, 2020: What to Cook This Week

It's just a few days before Valentine's Day, and love is in the air! This week, we’re declaring our passion for breaded fish fillets, our devotion to pesto macaroni and preparing carpaccio for our loved ones.

Monday: Barbecue Tempeh Sandwiches with Coleslaw

Our go-to for an uncomplicated dinner? A sandwich! We add tempeh coated with barbecue sauce, crushed avocados and a crunchy minced coleslaw (we use a mandolin for speed and ease) to make a supper sammie that never fails. Serve with more coleslaw or sweet potato fries.

Tuesday: Cornflake-Crusted Fish with Herb Butter

Are you finding it difficult to include fish in family meals? Why not try adding some crisp! By coating white fish fillets with a cereal like Corn Flakes, even the most seafood-resistant family members won’t be able to say no. And even less so once they are covered in a butter, lemon and herb sauce!

Wednesday: Pesto and Chicken Macaroni

Serve this macaroni dish hot for dinner and enjoy it just as much cold the next day for lunch. A “two-for-one” that only requires a few minutes of prep: Cook pasta and chicken breasts, then add pesto, tomatoes and mini bocconcini. Voila!

Thursday: Shrimp and Cilantro Root Stir-Fry

Here’s a great recipe for going into zero-waste mode. As we often only use only cilantro leaves, we find ourselves with stems and roots left over. Keep them to make this sauce, which works wonderfully with shrimp. Serve this dish with white rice, if desired.

Friday: Beef Carpaccio

Light the candles and play romantic music to cook this meal on this Valentine's Day. Whether you spend this evening with partners or with people you love, no one will be able to resist this perfectly seasoned carpaccio, served alongside baby arugula and shavings of parmigiano reggiano.
