10 Recipes for This Year’s Easter Brunch

What could be lovelier than getting together with loved ones on Easter morning to feast on good food and fun? For a meal to remember, we’re sharing a few of our favourite drinks, apps and sides, mains and desserts with you. Choose from among these 10 delicious recipes, but be warned: you’ll be asked to host Easter brunch every year from here on out!

1. Bellini Cocktail

Every brunch needs a refined but easy to prepare cocktail, and this bellini definitely fits the bill. Made with peach (or apricot) juice, sparkling wine and lemon zest, it’s the perfect bright and refreshing drink to toast at the start of your meal.

2. Asparagus and Pea Puff Pastry Tart

Your Easter morning feast simply can’t do without this asparagus-based appetizer. Simply spread creamy garlic and herb sauce on the puff pastry and then add the green stalks before baking. Top with peas, marinated shallots, almonds, herbs and grated lemon zest for an unmatched freshness.

3. Smoked Trout and Devilled Eggs Salad

Smoked trout (or salmon) and devilled eggs are brunch staples, respectively. But why pick one when you can combine both of them to make this fresh and filling salad? With its creamy and lemony yogurt dressing, it’ll be a unanimous hit around the table.

4. Ham Steaks with Creamy Sage Sauce

No Easter morning meal can do without ham. Serve it differently this year by cutting a toupie-style ham into thick slices and browning them in a skillet. Serve with a creamy sage and mustard sauce and you’ve got the perfect meat dish to enjoy alongside your eggs of choice.

5. Feta and Dill Soufflé Omelette

Serving eggs as a soufflé is already a unique alternative to a regular omelette or a scramble. But when you add fresh dill and salty feta cheese, it’ll turn the breakfast staple into a bright, spring-forward dish that will stand out on the table

6. Triple-Cream and Leek Mini Quiche with Pea Salad

Quiches are an Easter staple and these mini meatless versions are just irresistible. With a flaky and buttery crust, a creamy egg filling that includes leek and Brie-style triple cream cheese and a bright pea salad, they’re sure to impress.

7. Frangipane Bread Pudding

When serving a group, a baked casserole is usually the fuss-free way to go. Like this frangipane bread pudding that boasts egg custard-soaked slices of cranberry loaf that are then coated with an almond-flavoured cream. You can prepare it the night before and bake it in the oven, letting the warming scent waft through your home as guests arrive.

8. Maple-Caramelized French Toast with Stewed Blueberries

Easter coincides with springtime, which coincides with sugaring-off season, so why not include a nod to maple in your meal. These French toast slices include maple syrup in the custard, bringing a lovely caramelization. Top with a sweet and tart blueberry compote (yes, this also includes maple!) and you’ve got a sweet main that hits all the right notes.

9. Chocolate Easter Egg and Caramel Cupcakes

Candy-coated mini chocolate eggs come standard during the holiday. So it just makes sense to serve up a colourful dessert starring these festive treats, like our mouth-watering chocolate cupcakes with a caramel centre and chocolate whipped cream.

10. Citrus Pound Cake

For the non-chocolate crowd, a sunny dessert bursting with citrus flavour is a smart choice. Best of all, this stunning treat follows the tenets of assembly cooking, combining store-bought ingredients with homemade elements to save you time. Pick up a vanilla pound cake at the grocery store, fill it with a homemade lemon cream, and then top with shiny meringue made using a hand mixer, orange and grapefruit segments and lime zest.
