July 20–24, 2020: What to Cook on a Camping Trip This Week

We’re off on an adventure this week and getting inspiration from simple camping recipes. These dishes require minimal cleanup, few ingredients and can be cooked on the grill, in a single skillet or on a burner!

Monday: Trout with Brown Butter and Almonds

There’s nothing quite like cooking fish on a camping trip! It’s simple and tastes like the great outdoors. Here, you can prepare the vegetable papillotes as well as the brown butter in advance. And it goes without saying that this dish tastes even better with freshly caught trout!

Tuesday: Grilled Cuban Sandwich in a Hot Dog Bun

This is the perfect recipe to use up leftover hot dog buns! Instead of a grill, we used a grill pan. Stuff the bun with all the fillings and enjoy it with good company around a campfire.

Wednesday: Chorizo and Dried Mushroom Risotto

Beyond the classic burger or hot dog, risotto is another meal that can be enjoyed at the campground. Everything is cooked in the same pan and many of the ingredients don’t need to be refrigerated. For the full camping experience, enjoy it with a glass of white wine while sitting in a folding chair!

Thursday: Maple-Glazed Chicken Drumsticks

This simple recipe will satisfy even the most gourmet camper. It can be prepared in advance, is quick to cook and can be eaten with your fingers! Cook the drumsticks on the grill or on the campfire over a sheet of aluminum foil. Rustic success, guaranteed!

Friday: Two-Bean Chili

This is the ultimate camping recipe as it can simmer while you pitch your tent! You can also prepare it in advance and freeze it, and it will help keep the rest of the food in your cooler nice and cold. Take your time to savour your meal with some pita bread grilled over the fire.

Dessert: S’mores

The star of any camping trip! Just skewer a few marshmallows, toast them over the fire and then sandwich each one between two chocolate-topped cookies. It’s the ultimate in camping decadence.
