One month of winter is already gone, there’s only two left! To help you summon your courage and get through the season smoothly, count on comforting meals that are likely to become classics. On the menu: orange-glazed tofu, a generous sausage soup, pizza and more.

Monday: Ginger and Orange-Glazed Tofu

Like our recipe for General Tao Tofu, this saucy dish is a great success. Brown the tofu in oil until caramelized. Coat it with a fragrant ginger and orange sauce, then serve with sesame spinach and a side of jasmine rice. A perfect recipe for a weeknight.

Tuesday: Pappardelle with Salmon and Shiitake Mushrooms

The perfect marriage of pasta and fish, this recipe is ready to serve in only 30 minutes—an asset to keep up your sleeve for busy nights. Cook the salmon and mushrooms with a leek in broth, then add some cream at the end of the cooking time. Coat the pappardelle with this sauce and sprinkle with some chopped dill. Wednesday: Sausage and White Bean Soup with Parmesan Croutons
