10 Citrus Recipes That’ll Brighten Your Winter

To bring a little sunshine into the kitchen between snowstorms and gloomy days, brighten up your table with colourful citrus fruits, at their peak during the colder months. Check out these fruits prepared in various ways, from appetizer to dessert, as we discover the many varieties that are begging to be discovered.

1. Warm Broccoli Salad with Blood Orange and Creamy Almond Dressing

This salad brings a surprising pairing of broccoli and the fragrant blood orange. With a creamy almond butter vinaigrette and crushed almonds, the salad has bright flavours and textures that create a perfect balance. A radiant starter to kick off a meal just right.

2. Lemon and Artichoke Linguine

Being able to cook dinner in a single pot is sure to brighten any day. In this dish, the pasta cooking liquid consists of chicken broth to which lemon zest has been added. The linguine are then coated in a creamy sauce. Garnish with pancetta and artichoke hearts, and serve the pasta with a wedge of roasted lemon.

3. Thai Pomelo and Shrimp Salad

The imposing pomelo is sure to steal the show alongside red cabbage and marinated shrimp, tossed with a Thai-inspired dressing made with fish sauce, lime juice and brown sugar. Pomelos are sweeter than grapefruit and less acidic. Add texture by topping the salad with fried onions and crushed toasted peanuts.

The Meyer lemon is essentially a cross between a lemon and a tangerine, and it is much sweeter than a regular lemon. Here, the citrus is transformed into a quick and easy confit that is sure to enhance a myriad of recipes. Unlike the traditional method, where whole lemons are macerated for nearly a month in salt, we’ve cut them into small wedges here. The result? They’re ready to use in just one day!

5. Orange and Saffron Confit Fennel with Pork Chops

Saffron, turmeric, carrots and oranges give us a vibrant shade of yellow and orange. First, make an orange and harissa salt to coat the pork chops, which are then browned in a pan. As a side, it’s the classic duo of fennel and orange. Finally, garnish the meat with fennel confit in butter, honey, orange and spices.

6. Candied Kumquats with Ginger

Did you know that the kumquat peel is sweeter than the flesh? In this recipe, cook these citrus fruits resembling tiny elongated oranges into candy, which you can then use to decorate desserts or eat as is. Let the halved kumquats simmer in water and sugar until they become translucent. Then roll them in sugar so that they look like gumdrops.

7. Cara Cara Orange and Dark Chocolate Tart

Less acidic and sweeter than other oranges, Cara Cara is simply delicious in desserts. For this tart, chocolate is infused with orange zest. Place a few slices of the pink citrus fruit, raw and peeled, on the surface of the pie, as well as a pinch of Maldon salt to add crunch to every bite.

8. Mini Dutch Baby Pancakes with Clementines

The Dutch Baby is a puffed pancake that is usually cooked in a cast iron skillet over high heat. Individual portions can  be made using nonstick muffin tins. Fill the small pancakes with a mixture of ricotta cheese, honey and clementine. To ensure the mini pancakes remain in their risen state, be sure to enjoy them immediately after they come out of the oven.

9. Dried Citrus Slices

Do you find all these citrus fruits just magnificent? Dry a few slices for home decor, to adorn wrapped gifts, or simply to garnish cocktails. Just place them on a baking sheet, bake them in the oven at a low temperature, and let dry. The drying time varies depending on the size of the fruit.

10. Coconut and Mint Limeade

Go on a trip by mixing the flesh and peel of limes along with coconut water and sugar. Unlike coconut cream, coconut water brings a lightness to the drink. For a version with a kick, be sure to add a little rum.
