If you’ve ever dug into a creamy bowl of mashed potatoes, you know that potatoes are one of the most comforting foods out there. The best part is their versatility, as they can be cooked in a myriad of ways. Read below for 10 of our favourite recipes.

2. Vonnas-Style Potato Pancakes

These potato pancakes, originally from Vonnas, France combine mashed potatoes (perfect for using leftovers!) with flour, milk and eggs. Fry in butter and serve with smoked salmon or caviar and a dollop of crème fraîche for a delectable appetizer.

3. Potato and Onion Soup Au Gratin

French onion soup meets potato and bacon soup in this cozy recipe that fires on all cylinders. The flavours of onion, garlic, butter, leek and potatoes are bursting in the smooth purée, that’s then topped with Gouda, cheddar, a slice of toasted bread and bacon bits before being placed beneath the broiler.

Hasselback potatoes are potatoes cut without going through the bottom, creating a fan-like effect. Tossed in butter (to get between each slice!) and then baked, they’re wonderfully golden and crispy and will make quite the impression on the dinner table!

7. Slow Cooker Scalloped Potatoes

Elevate your side dish game with these scalloped potatoes. Thinly sliced potatoes swim in a velvety cream sauce infused with garlic, and then the dish is cooked to golden perfection in the slow cooker. It’s so comforting, you’ll want to eat the whole thing as your main meal!

8. Egg and Potato Salad

Potato salad is a classic picnic dish, the ultimate side dish to grilled meat. But this recipe stands on its own, with hard-boiled eggs bringing a punch of protein. And with juicy bits of crunch from the celery and a tangy dressing, it’s a meal you’ll want to enjoy year round.
