8 Recipes Featuring Mascarpone Cheese

Mascarpone is a high fat, mildly sweet and smooth cheese that you should always have on hand in the fridge! It has the power to transform not only desserts but various savoury dishes (yes!), as well. Here are eight recipes that showcase the delicious potential of this dairy product.

1. Tiramisu Cheesecake

In a regular tiramisu, mascarpone is what gives the dessert its signature velvety luxuriousness. Adding it to a cheesecake mixed with cream cheese helps to recreate that classic flavour profile; its creamy richness helps to balance the bitter espresso and cocoa notes. It also helps make the texture softer and less tangy than a regular cheesecake.

2. Lobster, Pea and Mascarpone Risotto

When lobster season rolls around, many go for a classic lobster roll, but why not try something different? This delicious risotto with lobster and peas also includes mascarpone, which enriches the dish without the sharper tang of many cheeses usually used in risotto. It also creates a smooth finish and complements the delicate seafood rather than overpowering it.

3. Vanilla Cake with Strawberries, Basil and Mascarpone Cream

It brings creaminess to the filling, all the while keeping it smooth and airy. And when mixed with the lemon curd, it tempers the acidity and results in a rich yet fresh-tasting dessert.

5. White Pizza with Trout, Shrimp and Zucchini

Looking for a pizza that isn’t so tomato forward? Mascarpone makes the perfect creamy base, bringing richness and moisture while balancing the salty Parmesan sprinkled over it. It also complements the briny seafood, making for an elegant and delicate pie.

6. Chocolate, Mascarpone and Maple Cupcakes

The maple flavour in this dessert may take centre stage, both in the chocolate cupcake and drizzled on top, but that doesn’t negate the role of the mascarpone. It brings a silky texture to the icing, helps to soften its sweetness and makes it feel less heavy compared to other frostings. 

7. Pavlovas with Passion Fruit Crémeux, Pineapple, Coconut and Basil

In this little pavlova nest that’s bursting with sunshine, the basil-infused mascarpone cream adds a creamy contrast to the meringue, oven baked until crispy on a sheet pan, and is the perfect foil for the bright tropical fruit.
