June 14 to 18, 2021: Gourmet Seasonal Summer Weekday Menu

Delicious grilled produce, seasonal vegetables and refreshing cocktails—that’s what the best summer meals are made of! Because the warmer season is finally here, we’ve put together a weekday menu to celebrate the occasion. Welcome to the start of a gourmet summer!

Monday: Chicken Panini with Roasted Bell Peppers and Smoked Gouda

A Monday night panini sounds perfect, right? Just marinate the chicken and bell pepper in a simple but excellent mixture of lemon juice, oil, spices and salt, and then have fun varying the format of the panini, using naan bread, pita or ciabatta instead!

Tuesday: Fennel Salad and Salmon Carpaccio

Forget about turning on the stove in the summer! Plus, making salmon carpaccio is much easier than you think. This recipe is perfect for adding fish to your summer weekday menu, for a meal full of flavour and freshness!

Wednesday: Barbecue Chicken Bowl with Celery and Pineapple Salad

We love a good crunchy salad on top of a bed of rice vermicelli noodles with juicy pineapple, crispy celery and herbaceous basil. Combining salty, sour and sweet flavours, this salad has it all, even pieces of chicken tossed in slightly spicy marinade. It’s a clear dinner winner, and the leftovers are perfect for lunch the next day!

Thursday: Raw Asparagus, Zucchini, Pine Nut and Parmesan Salad

We tend to appreciate raw vegetables most in the summer. And even more so if they are farm fresh. In this recipe, asparagus and zucchini are thinly sliced and tenderized in lemon juice and balsamic vinegar. Add zucchini flowers and fresh basil right before serving for a sweet and subtle addition to this sophisticated salad.

Friday: Grilled Leg of Lamb

It is very rare that we think about cooking a leg of lamb in the summer. And yet, this cut of meat cooks very well on the grill! So much so that we should not deprive ourselves of it on weekdays, or at least have it to celebrate the end of the week. Served boneless, accompanied by mustard sauce and a lemony baby kale salad, it’s the ideal refined dinner to start the evening off right!

Drink: Hugo Spritz

Did you know that the Hugo cocktail is a refreshing and low-alcohol variation of the Aperol Spritz created about 15 years ago in the province of South Tyrol? This prosecco-based drink was originally scented with elderflower syrup, but the trend has been to replace it, as we did here, with an elderflower liqueur. It’s the ultimate warm weather drink!
