October 6 to 10, 2025: What to Cook This Week

What’s for dinner? We’re answering the famous question with a vegetarian sandwich, a cozy ramen bowl and more for a delicious week ahead. Which recipes will you add to your regular rotation?

Monday: Tofu and Mushroom Banh Mi

We’re putting some colour on the menu this week with banh mi filled with tofu, mushrooms and julienne vegetables. The tofu and mushrooms are coated in a sweet, spicy sauce, while the baguette is brushed with mayonnaise and topped with cucumber, coriander and chili peppers.

Tuesday: Braised Cabbage with Sausage and Sweet Potato

Cabbage with sausage is a classic combination, and the addition of sweet potato brings some sweetness and starchiness to it. This one-pot recipe is the perfect meal for a simple weeknight.

Wednesday: Chicken Drumsticks with Tomatoes and Lentils

Place chicken drumsticks, seasonal cubed butternut squash, tomatoes and lentils in a Dutch oven and let simmer for an hour. You’re then left with a warm and comforting meal that goes great with bread, or served over pasta or rice.

Thursday: Cod with Paprika and Cherry Tomatoes

Back from the office with little time to get dinner on the table? Then this sheet-pan recipe is for you. With just 25 minutes of prep and 10 minutes to cook, this yummy fish and tomato dish served with couscous will come together before you know it.

Friday: Beef, Eggplant and Oyster Mushroom Ramen Bowls

Just a few cents a packet at the grocery store, dry ramen noodles can transform into a delightful dish when you take the time to cook with them, especially by using mushrooms and Chinese eggplant, which develop a depth of flavour the longer you brown and caramelize them. Coated with an umami-rich sauce, this beefy dish will be a hit with the whole family.
