Vegetarian World Tour: 8 Recipes from Faraway Lands to Eat Less Meat

All over the world, meatless dishes are part of cooking traditions and are appreciated by both carnivores and vegetarians. We took inspiration from these traditions to create comforting and satisfying recipes that will be sure to whet your appetite. You can also cook them in a jiffy when you feel like eating less meat and feasting on veggies.

1. Moroccan Legume Soup

Moroccan cuisine offers a great variety of vegetable-protein-based recipes. Though it can also be made with meat, harira soup includes loads of vegetables, legumes and a good dose of spice. With the addition of a beaten egg and spaghetti, you get a thick and hearty meal soup.

2. Eggplant Stir-Fry in a Garlic and Ginger Sauce

The star of this Asian-inspired dish, eggplant is a widely produced vegetable in China. Serving this quick and easy vegetable stir-fry with jasmine rice makes it a complete meal.

3. Mushroom and Sauerkraut Pierogis

Pierogis are Polish raviolis traditionally stuffed with potatoes, cheese, meat, mushrooms and cabbage. This dish of fresh stuffed pasta is a mushroom triple threat: portobellos and bolete are added to the filling, which also includes sauerkraut, while white button mushrooms are served as a garnish. A bowl of Polish bortsch is a great accompaniment to this dish.

4. Vegetarian Black Bean Burritos

Enchiladas, quesadillas and tacos: Vegetarian versions of these classics of Mexican cuisine make everyone happy. This meatless burrito recipe is proof of that. The toppings include the famous frijoles refritos (refried beans) and pico de gallo (tomato and onion salsa). Brown rice and whole wheat tortillas make the dish even more filling.

5. Soba Noodles with Vegetables and Rolled Omelette

Vegetables are abundantly used in Japanese cuisine and this recipe takes inspiration from yakisobas (pan-fried noodles), which contain a generous quantity of vegetables, including cabbage, mushrooms and baby broccoli. This dish can also be made with chicken or pork strips, as the Japanese often like it. In this case, we preferred to add slices of rolled omelette, tamagoyaki-style, a Japanese specialty. A nutritious dish perfect for weeknight meals.

6. Paneer Cheese Curry with Spinach (Saag Paneer)

Saag paneer is part of the very large array of vegetarian dishes in Indian cuisine. Much loved in this Asian country, this vegetarian curry mixes spinach with a variety of spices and paneer cheese. This ingredient may be more difficult to find in our parts, but you can make it yourself following the steps included in the recipe.

7. Eggplant and Egg Sandwiches (Sabich Sandwiches)

Falafels and hummus are among the most popular vegetarian specialties of the Middle East. The lesser-known sabich, an eggplant and hard-boiled-egg sandwich, is another typical dish of the region that should have its place among our favourites. This version, stuffed with fresh ingredients, is topped with amba sauce and tahini sauce, both great staples of Middle Eastern cuisine. A perfect lunchtime recipe.

8. Ricotta and Spinach-Stuffed Giant Pasta Shells in a Rosé Sauce

Italy grows vegetables in abundance year-round and it’s well known that Italian cuisine is all about produce. It offers a wide variety of well-balanced, local vegetarian specialties and pasta is often at the heart of these dishes, as is the case with this one. Giant shells stuffed with a creamy mixture of ricotta, Parmesan and spinach are served with a velvety rosé sauce. Italian-style comfort food? Love it!
