Recipes for a Successful Winter Brunch

Want to impress family and friends with a casual yet gourmet brunch during a weekend at the chalet or a relaxing Sunday at home? This menu can be reproduced as is or in part. The recipes combine savoury and sweet dishes, some served hot, others cold. They can be cooked in advance so you do as little as possible the morning of the meal, in order to spend even more time with loved ones.

1. Ricotta and Candied Orange Croissants

The secret behind these Neapolitan-inspired pastries? Simple store-bought croissants are enhanced thanks to a creamy homemade filling of ricotta, candied orange peel, maple syrup and ground almonds. In addition to being easy to make, the recipe can be prepared the day before.

2. Mini Bagels with Smoked Salmon


Bagels with smoked salmon are a classic. And thanks to this recipe, you can make them at home by baking the bagels in the oven in a doughnut pan. Bonus? These tiny bagels are softer and chewier than the full-size ones. They can also be served as appetizer bites.

3. Cheese Omelette Soufflé

To avoid rushing in the morning, simply prepare the cheesy béchamel the day before, and then whisk in the eggs. Pour the preparation into a loaf pan, and once everything is in the oven, it will puff up!

4. Fruit Salad

Fruit salad is always welcome come brunch. In this recipe, the fruit is diced into small cubes, the advantage being that you can savour all of them fully with each bite. If you’re short on time, slices of various citrus fruits nicely arranged on a large plate, or clementines in a bowl, can also do the trick.

5. Cold Pork Roast with Ginger

Similar to your grandmother’s cold pork roast, this version includes ginger to enhance the flavour. Once cooked, the meat absorbs the marinade very well and becomes absolutely succulent. All that’s left is to cut it into thin slices and then serve cold. The leftovers also make great sandwiches the next day.

6. Cranberry, Apricot and Pear Chutney

A delicious fruit chutney like this one, made with cranberries, apricots and pear, goes great with cold cuts, a cheese platter or a cold pork roast. You can make this recipe up to two weeks in advance and then keep it in the fridge.

7. Oven-Baked Apples

Caramelized apples served with crunchy granola and yogurt… Their sweet taste pairs perfectly with the tangy raspberries and pomegranate seeds, which add a touch of freshness to this dessert.

8. Coconut Granola

Granola always has a place at the brunch table. This recipe with rolled oats, coconut, and pumpkin and sunflower seeds is easy to make. Don’t hesitate to cook it in advance, especially given the granola will keep for three weeks in an airtight container at room temperature.

9. Hot Chocolate Bar

Add the final touch to brunch by including a hot chocolate bar where everyone can find the ingredients to assemble their own cup. The base, prepared 24 hours beforehand, contains milk and almond butter, making it delicious and creamy. Garnish with cranberry meringue pieces or whipped cream.
