Thursday: Potato Ratatouille
For this hearty ratatouille, we included rustic organic veggies (eggplant, celery, zucchini, green beans, onion, green peppers, potatoes and tomatoes). The flavours are so fresh, all you need is garlic and a good olive oil to bring them all together.
